49 Wellington is a 19 year limited release and is a tribute to the historic building in Toronto. Red oak inserts are used in homage to the red bricks of the building. Made in the Yukon, release #25, is a 7 year old "Peated" and wheated single malt. Initially matured in virgin oak for one year, the whisky was then transferred to ex-Bourbon casks for the remaining maturation. Like smoke laying in a chilled valley, the scent is dirty but still bright with grassy malt, apples & pears. The mellow entry quickly evolves, a malt center with dusty ashes, scraggly edges thick with peat overload the palate, brash layers building with each successive trial. 43%
